1 tb Olive oil
1 md Onion; chopped
2 sm Green bell peppers;
- seeded, chopped
3 lg Ripe tomatoes;
- peeled, seeded, chopped
1 tb Dry white wine
1 pn Natural sugar
Salt
Black pepper; freshly ground
1 tb Fresh basil; finely chopped
Traditional Pizza Dough
Like pizza Margherita, which uses tomatoes, basil, and cheese to
depict the colors of the Italian flag, this pizza is topped with
sauteed tomatoes, green bell peppers, and onion. As in many Italian
preparations, these vegetables are cooked until very soft. The word
bandiera is Italian for "flag".
Preheat the oven to 450?F.
Heat the olive oil in a large skillet over medium heat. Add the onion,
cover, and cook until softened, about 5 minutes. Add the bell peppers,
cover, reduce the heat to medium-low, and cook until tender, 5 to 7
minutes. Add the tomatoes, wine, sugar, and salt & pepper to taste.
Cook for 10 minutes, stirring occasionally, to blend the flavors. Add
the basil, then taste and adjust the seasonings.
Punch the dough down. On a lightly floured work surface, roll out or
stretch the dough into a circle about 1/4" thick. Lightly oil a pizza
pan or baking sheet and place the dough on it, stretching it to fit.
Bake on the bottom oven rack for 8 minutes.
Remove from the oven and top with the vegetable mixture, spreading it
to within 1/2" of the edge. Bake until crust is golden brown, 10 to 12
minutes. Serve hot.
