    Title: Gà Xào Hạt điều (Stir-Fried Chicken With Mango And

    Yield: 4 Servings

    Oil; for deep frying
    4 Chicken breasts (1 lb
    - 500 g); cut into chunks
    1 tb Garlic; minced
    1 Finger-length red chili;
    - deseeded and sliced
    3/4 c Snow peas (80 g)
    1 tb Fish sauce
    1 ts Lime juice; freshly squeezed
    1 ts Sugar
    1/4 ts Ground white pepper
    1 sm Ripe mango (3/4 c); peeled,
    - pitted, and sliced
    1 Ripe tomato (1/3 c);
    - blanched, peeled, then
    - deseeded and diced -OR-
    1/3 c Canned tomatoes (30 g)
    Cashew nuts; roasted

    Heat the oil in a wok over medium heat until hot. Deep-fry the
    chicken for 4 to 5 minutes until just cooked. Remove and drain on
    paper towels.

    Drain off all but 2 tb of the oil in the wok. Reheat the oil over
    medium heat and stir-fry the garlic and chili for 1 to 2 minutes,
    until fragrant and tender. Add the deep-fried chicken and snow peas,
    and stir-fry to mix well. Season with the fish sauce, lime juice,
    sugar, and pepper, and remove from the heat.

    Just before serving, add the mango, tomato, and cashew nuts, mix well
    and transfer to a serving platter. Serve hot.
